I'd play it safe and just stick with the plasma pistol. I'm not sure, but I think ram kills are also not permitted. You're right, grenade kills are also out of the question. There's no real added benefit to doing these particular achievements (single player weapons) on normal or hard - unless you enjoy the challenge, of course.

Doing them on easy saves you a lot of hassle. Personally I did all of those single player weapon achievements on easy difficulty, after finishing the campaign on normal.
